i did it!


Tonight I made my first meal from the cook book Deceptively Delicious. I had been hearing about it for months and then saw a rerun of Oprah a few weeks ago when Jessica Seinfeld, the author was on. I was very motivated by the show and thought I can do this and I need to do this. Claire and Ava are both really good eaters....but still don't get enough veggies. I have to confess that part of that is my fault. I cook veggies, just not a very good variety at all, so needless to say they are over green beans! I have been pureeing veggies for the past week, which is actually very fun!, but tonight was my first time cooking with them. I made macaroni and cheese and chicken nuggets. The mac had butternut squash puree and the chicken was coated in broccoli puree. I had high hopes for the meal and they were definitely met!! The girls (and Jay and me) both loved the mac, Claire ate two helpings before I could eat my first one! The chicken took a little convincing because they could see that it was a little green! I reminded them of the story by Dr. Seuss, Green Eggs and Ham and then they thought it was cool and ate all that was on their plate! I really could not believe they liked the food so much and they never knew they were getting some awesome nutrients!!! Thursday night I am making a chicken dish with cauliflower puree and Saturday morning I am going to try french toast with sweet pot. and pumpkin puree. Once you have your purees done and in the fridge or freezer depending on when you are going to use them it is easy to incorporate them. The cool thing is you can add them to anything, not just recipes from the book! One more great thing about the recipes is that they are all low fat! The one thing I am dying to try are the brownies with spinach in them! I will keep you all updated!
